“Comedy always pushes some buttons, because it wouldn’t be comedy if it didn’t.” -Beth Behrs

Breakfast smoothie day 7!!!

3 ounces Greek yougurt

1/2 a carton of blueberries

A handful of Pineapple cubes

A bunch of kale

4 ice cubes

1/2 cup of water

Throw everything in blender and blend until smoothe.

This smoothie was a little thicker than I like but it tasted great. It is inspired from Beth Behrs’ book The Total Me-Tox. She gives a few smoothie recipes and this one is called Smooth-Out Smoothie. She also says to add 1 Tbsp of almond butter but I don’t have any in my home so that was left out. If you would like to learn more visit her website, totalmetox.com.

If you have tried any of her smoothies or have any comments about her book, please comment below. As always, thank you for stopping by and I hope you have a wonderful day!

Have you ever gone to a restaurant and loved their food so much that you wish you could make it at home? My husband and I absolutely love the Zoupa Toscana at Olive Garden so he suggested that I try to make it. Well, using Pinterest, I was able to find a copycat recipe that actually works. It’s so delicious and it’s really easy to make. We have made some of our own adjustments to it but it’s really to your liking. The recipe we use is at High Heels & Grills. Here is the recipe with the changes we made, though.

Olive Garden Zuppa Toscana Copycat
Recipe from Food.com
Makes about 8 cups
Ingredients:

  • 1 lb ground Italian sausage {I use mild}
  • 1 can chicken broth
  • 4 cups water
  • 3 russet potatoes cut in rounds
  • 1 small white onion, chopped
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1/2 cup  real bacon bits {about 5-6 slices of cooked bacon}
  • 2 cups fresh kale
  • 16 oz heavy whipping cream
  • Italian Seasoning
  • Romano cheese
  • Olive oil
Directions:
  1. Add  olive oil to pan, let heat. Once heated, add sausage and Italian seasoning.
  2. Brown sausage in a large skillet on medium heat. Strain and rinse fat. {You don’t HAVE to rinse your sausage, but you’ll get a greasy orange film if you don’t. There’s a little more flavor to it though, so it’s your preference.}
  3. Combine chicken broth and water in a large pot and stir. Add the sausage, potatoes, onion, and garlic. Cook on medium heat until potatoes are soft, about 10-15 minutes.
  4. Add bacon, salt, and pepper and let simmer on medium-low for another ten minutes.
  5. Turn to low heat and add kale and cream. Heat through completely and serve.
  6. Add cheese on top to liking

We have made this recipe countless times and each time it gets better. If you really want to learn how to make a certain food from your favorite restaurant, just check Pinterest. I’m sure you’ll find help there. Thanks for reading. If you try this recipe, let me know how it went!

So, today I would like to talk about something that occurred just a few hours ago. It really all started a couple of days ago. My soon-to-be sister-in-law has a birthday today (22) and I came up with the BRILLIANT idea to make her cake. Well, there was a cake that I had seen and I was dying to make it. HAHAHAHAHAHAH! Being more of a beginner baker, I didn’t realize how “in over my head” I was. It wasn’t horrible (it’s standing) but it wasn’t as easy as the lady made it seem. No worries, it will work.

Anyway, this is the link to the cake I made: https://www.youtube.com/watch?v=xpNnCB4Mvk4&t=269

If anyone attempts it, let me know how it turns out for you! Don’t give up, either, because you CAN do it. Thankfully I had my aunt here to help me when I got frustrated. color I did seemed to break, which started my frustration. Then the frosting wasn’t spreading like she had done. Again, I am still a beginner baker and am still learning, haha. Next time I will do something a little more simple.

What have you made recently? What has made you frustrated recently? Just keep pressing on and you can get through it. The cake is only as hard to make as you let it be….and if you attempt something well about what you are capable of doing. Try going for the smaller one first 🙂

I have to get ready for the “party” see y’all on Friday!
